I pulled a large beef roast out of the freezer last night. Since it weighed over 4lbs I decided it would work for two different stews. So, I’m batch cooking today and making up the recipes as I go.
Here’s what I have so far:
Plenty for the compost pile
One pot of simmering SAVORY BEEF STEW
One pot of LAMB/BEEF FRUIT and VEGETABLE STEW
Recipes are coming after a thorough testing today at dinner.
I do know that both of these stews will freeze beautifully and I’m looking forward to pulling them out and reheating once the renovation starts on our kitchen, where we had a fire last Saturday. The fire started in a kitchen drawer that had some old book and small box matches. Apparently, some of them got out of the little boxes and under the plastic sort tray. When my husband closed the drawer, they caught fire. He was outside and didn’t discover it for about 15 minutes. By then, smoke was rolling over that whole side of the kitchen.
Since, it appears to be impossible to remove the smoke damage, we are now looking at ripping our walls and cabinets.
These stews are going to be very welcome in the coming weeks.
